HEALTH 101: What I Ate Yesterday

Hey girls,

I recently moved to California just about a week ago and I am more than thrilled to be in sunny San Diego with my amazing boyfriend, my Dad, and stepmom. They've lived here for years but Jed and I just recently moved back. It was quite the experience and I'll be writing a blog post about our move soon, so stay tuned! Anywho, since moving here we've been staying with my Dad and stepmom and they are health fanatics. Everything in their house from food, to household cleaning products, makeup, etc is all 100% natural, organic, and not tested on animals. I just love being here and really getting super healthy and fit. It's such a good feeling to know that we can be healthy and in touch with ourselves and the Earth and NOT harm animals or our bodies in the process.

Here is a peek at what I ate yesterday. Along with working out and joining a new fitness gym I've gotten incredibly engulfed in the vegetarian lifestyle. I'm more obsessed and motivated to eat clean, healthy, and organic and it feels amazing to know exactly what I'm putting into my body.

My stepmom is also vegetarian and the two of us went on a healthy grocery shopping trip yesterday. We found a few of her favorite vegetarian recipes and created our shopping list around those dishes. After getting all of our lists together we headed to Stater Bros to begin our shopping spree :)

Heres part of what we came up with..the fresh veggies & fruits had my mouth watering before we even left the store :)


Time for breakfast :)


For a quick breakfast before my workout I decided to have one slice of Ezekiel Cinnamon Raisin bread with a bit of all natural organic peanut butter. Ezekiel bread is incredibly healthy for you and one slice is only 80 calories! How amazing is that! I'm going to write an entire post on the amazing biblical bread :)

Around lunch time I decided to have a slightly filling, very nutritional lunch. I was pretty hungry after my workout but didn't want to feel stuffed so I chose  something light and yummy.


I had one ogranic 100% whole grain pita pocket with a bit of homemade roasted red pepper hummus ( My boyfriend Jed is a chef and he whipped up a couple different flavors of hummus and ohh my goodness are they ever tasty : ) ) I added a little over half a banana and my lunch was complete. I felt rejuvenated and full after this delicious lunch :)

My stepmom, boyfriend, and I spent all of yesterday cooking which was a lot of fun! We created several different vegetarian side dishes which I'll post the recipes too soon. The first dish was a quinoa and fresh vegetable salad and the other was a wild rice casserole. Both were extremely tasty :)


For dinner I had a bit more of my boyfriends homemade hummus, and two servings of the quinoa salad and the wild rice casserole. The dinner was so good and healthy I just loved it :) Every bite was savory and delicious! I didn't find myself feeling stuffed or too full, I felt satisfied and was very happy with that :)
